Autumn / Fall is here and that means pumpkins 🎃 Homemade roasted pumpkin wedges (recipe below) V tall pumpkin spiced latte ( was being kind w/ semi-skimmed milk which contains 50 grams of sugar! That’s not including the whipped cream)

I have been enjoying the bountiful supply of pumpkins and squashes at the farmers market. I usually roast them with aromatic herbs and spices such as cumin seeds, rosemary and sage.
They feature heavy on my meals this time of year. They are relatively low in calories and carbs. They are high in nutrients such as beta carotene and potassium.

I prefer to always to eat my calories and especially sugars from whole food sources which provide the nutrients above along side fibre keeping me satisfied and microbiome happy.

👉🏼 Recipe
400 grams pumpkin (peeled and sliced into wedges)
1 tsp avocado oil
1 tsp freshly ground cumin seeds
Rosemary sprig

👉🏼 Directions
1. Preheat oven to 350F
2. Line a baking tray with greaseproof paper.
3. In a bowl, mix the wedges with the oil, cumin, rosemary until well coated.
4. Lay on tray and bake in oven for 30 Mins
5. Remove and shake. Turn heat up to 400F for the last 10 minutes to crisp up.
6. Remove and season to taste with sea salt
7. Serve as a side or as a snack.
